Given that the WiiU is still in development, I imagine if enough people want gamecube control they might go ahead and add it.  That would not surprise me at all.  They are currently getting feedback and hopefully doing something with it.  Time will tell.
I didn't know how much I really enjoyed the Sierra Adventure Games until I played them all over again 15 years later.

I prefer the gold classic controller pro that came with my copy of Goldeneye to the motion controls. I'm just used to it with James bond games by now. I can't vouch for Skyward Sword, as I left the line when a media guy cut. I had waited for like, an hour to play the thing, only to be cut off by a media guy.

Skyward Sword requires Wii Motion Plus. You can't use a controller. You also can't use a controller in Twilight Princess either unless you actually have the GameCube version.
