golden pancakes!

About sixteen 4-inch pancakes
Here is the classic all-American pancake, the basis for seemingly endless variations.
Whisk together in a large bowl:
1 1/2 cups all-purpose flour
3 tablespoons sugar
1 3/4 teaspoons baking powder
1 teaspoon salt
Combine in another bowl:
1 1/2 cups milk
3 tablespoons butter, melted
2 eggs
(1/2 teaspoon vanilla extract)
Mix the liquid ingredients quickly into the dry ingredients - just enough to combine. Batter will be lumpy. Use 1/4 cup batter for each pancake. Cook on a griddle or in a skillet with a little bit of oil. When bubbles rise to the tops of the pancakes, flip them with a spatula and cook them on the other side.
