Does anyone know why, in photoshop, when i copy part of a gif file with text to another gif file, the text changes color and how to fix it?

Different gif files have different palettes; you temporarily have to change the color mode to 24-bit rgb so it acts like a regular bitmap. Then when you resave as a gif it will readjust the palette.
