Will the new DOS Box improve the quality of the old Sierra collection games that are on cd and use an older version of DOS Box?

Hummmmm...Probably. Though it doesn't have the nice interface but you might be able to use the one in the collection. It's worth a try. If you do please let us know. I never bought the collection so I can't try it.
