The main ingredient in spam is pork...but if you're dealing with potted meat then you will see mechanically seperated chicken followed by beef tripe (yum! Cow stomach!)--ahh...the things you learn in vet school....

The reasoning I've used is somewhat involved but I might as well supply it as I did not take this from a paradigm (as I don't even seem to have any available with which to check)...
A class of Greek nouns had stems which ended in
F otherwise known as a digamma which was pronounced as an English
w. βους is such a noun. So, where this digamma was between two vowels (an intervocalic digamma similar in concept to the intervocalic sigma) it dropped out (just like what the Athenians liked to do to intervocalic sigmas) and where it came between a vowel and a consonant it either became an upsilon.
There are other possible interpretations... I may look this up in a reference grammar later if I think to do it...
