The south is known for chili, country/chicken fried steak, jambalaya (any Hank Williams fans?), gumbo, other cajun foods, certain fish plates, spicy barbecue (not sure of the origins of BBQ, but Texas and Louisiana hold the reputation), chitlins, country potatoes, grits... quite a few specialties.

That brings up another good point: BBQ, Damar. BBQ.

There are actually numerous styles of BBQ across the South. They are mostly differentiated by type of meat and type of sauce, though a few differ in method of preparation (which doesn't make much sense since the preparation method is the BARBECUING!!).

Dang, ya'll, now I want barbeque! (that "ya'll", Deloria, that "ya'll" is just for you XD :P ...I was sitting here thinking after I'd already said "dang": "how can I make this more Southern?" ;P)

Also, yes, Hank Williams + my grandmother = reasons why I cook.

To the best of my knowledge, BBQ stems from a Native American form of cooking (tossing the animal into a pit of coals.)  It was then co-opted by American culture and we've since created variations on that theme.  In fact, I believe it was George Washington's favorite food.  Still, I will concede the BBQ point (although I could be a jerk and claim that western BBQ is better than southern BBQ).  I will also concede the fried chicken point that will likely be made in the near future.  Is there anyone who doesn't like fried chicken outside of vegetarians?  Well I was engaging in hyperbole anyway, I guess.  The only good things to come out of the south now include BBQ, fried chicken, and pecan pie.

Though I will state for the record that I cannot stand grits.  And unless you have a crappy cut of meat, chicken frying a steak is a crime against cuisine!  You get that nice, thick steak and put away your meat mallet!  Marinate that sucker for a day, then slap it on a grill until it's nice and rare!

Shoot.  Now I want steak in addition to BBQ and pecan pie!  And the muffin!  I still want that muffin!

*has nearly finished eating a pecan pie*

When I replenish my stores, I will take a picture to post here (I eat it for breakfast with whipped cream and coffee! :D ...and thus MUST make more as I am running out. :P (Unfortunately, I'll have to restock on ingredients after this one and Tesco does not always have the bags of pecans that are big enough to make two pies! :())

I never did take a picture of the pecan pie... but I'm sure you'll all agree this more than makes up for that:



It's a chocolate mousse cake on top of a layer of strawberry slices in strawberry syrup on top of a cheese cake. :yes: It is exactly as awesome as that sounds.

oh, bah... that's the first one... that's not even the good one: here's the second--



While the mousse came out better this time, the cheesecake somehow did not work out as well. :-\ (It's just not quite stiff enough and there has been like run off that would seem to indicated that it is sweating but it isn't obvious which portion of the cake is doing the sweating.) One of these days, I will get them both right. :)

I love chocolate mousse and I love cheesecake.  But I hate strawberries.  That cake still looks awesome, though.  Even with strawberries.

I just bought myself a little pie pumpkin and I plan on cutting it down, steaming it, mashing it, then either making it into a pie or a pumpkin roll, depending on what I'm feeling.  Updates to come!
