This is a pretty tough choice, but I'd have to say The Great Hall.

We've been trying for months to get real-time reflective floor textures, and we only managed to figure it out a week or two before submitting the demo to VU.  There is a slight performance hit because of the extra processing involved, but the effect is really awesome and worth it.  The screenshot there gives you a taste of what to expect.

That's some fantabulous artwork, my friends.  I'm sure you've heard it a million times, but it must be heard at least once more, "I CANNOT WAIT TO PLAY THIS GAME!!!"  No, seriously...I can't wait...I'll die.   

Okay, in all true seriousness (I think), my favorite piece (not an easy decision to make) is "The Black Cloak Society."  I always wondered what happened to Shadrack after King's Quest VI, and I believe this particular piece captures the purely evil purpose he no doubt plans for the royal family (and that's with most of him concealed by shadow).  I thought for sure he would be the evil mastermind behind the "Mask of Eternity," but alas I was sorely mistaken.  Ah, but all's well that ends well I suppose.

I picked the Ferry Dock, because it was the first one I saw with the interface bar thingy at the top, but now that I think of it, I like the Great Hall better.
